On Nov 7, 2021, the second Kimchi Cook-off was held at the Culinary Institute of America (CIA) at Copia. It is the world-renowned culinary school in downtown Napa. Originated from the Kimchi Festival held in France, the Kimchi Cook-off is now held annually in the U.S., France, and Britain.
The goal of this event is to share the wonders of kimchi around the world. Sharing about the event, Brad Barns, the Director and Consultant of CIA, said, "I don't think many cooks in the U.S understand kimchi and therefore, they have trouble incorporating it into a dish and allowing it to show up as kimchi and do the things that kimchi can offer to given set of ingredients".
When asked if more people are eating kimchi nowadays, "Definitely. in the U.S., I, for instance, was in a very backcountry area of Michigan a couple of weeks ago, I didn't see any Asian people, no Hispanic people, no black people but there was kimchi at the supermarket, so I said - aha!" said Marja Vongerichten, the host of "Kimchi Chronicles", "I live in New York, everybody knows about kimchi".
Around 320 people from all across America applied online, 8 finalists competed against each other with their own original recipes that incorporated kimchi.
